It’s a kale salad with cheese cucumber yoghurt dip and baked purple yam chips! It’s tasty, healthy, filling and very quick to make.
Recipe-
For salad-
1/2 cucumber peeled and diced in cubes
1/4th green capsicum diced
1/2 tomato diced
1 big stem of kale leaves washed and torn by hands into bite size pieces
For the dressing-
Salt
Pepper
Lemon
Honey
For the dip-
Hung curd
Half cucumber grated and pressed so all water is drained
Half cube cheese grated
Salt
Pepper
Spanish masala-combo of dried red chilli and garlic powder.
Preparation-
For the salad-
Put all the chopped and diced veges in one bowl. In another bowlook mix all ingredients of the dressing and pour the dressing over the salad.
Take 3rd bowl n mix almost the ingredients of the dip and put a scoops of dip over the salad.
Serve with some store bought baked kand chips/purple yam chips.
Your meal is ready. Super yum and keeps u full but won’t get u lazy ???? You can also add nuts of your choice to the salad to make it more crunchy and healthy.
